- 30 g (1/4 cup) of breadcrumbs
- 30 ml (2 tbsp) of chopped flat-leaf parsley
- 30 ml (2 tbsp) of chopped dill
- 15 ml (1 tbsp) of chopped mint
- 15 ml (1 tbsp) of chopped sage
- 15 ml (1 tbsp) of chopped oregano
- 15 ml (1 tbsp) of olive oil
- 1 clove of garlic, finely chopped
- 2 racks of lamb, each with 8 ribs, trimmed (see note)
- 30 ml (2 tbsp) of Dijon mustard

- Position the oven rack in the center. Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
- In a bowl, combine all the ingredients thoroughly and set aside.
- Using a chef's knife, cut the lamb racks into 16 individual chops.
- Heat a large skillet over high heat and sear half of the chops in oil for 2 minutes on each side. Season with salt and pepper, then transfer to a plate.
- Brush one side of the chops with 15 ml (1 tbsp) of the mustard. Sprinkle half of the herb breadcrumb mixture on top, pressing down to adhere.
- Flip the chops over and repeat with the remaining mustard and herb breadcrumbs. Arrange the chops on the prepared sheet.
- Bake in the oven for 8 minutes or until the meat is pink. Serve with grilled asparagus, crispy potatoes, or a green salad.
